What is a "Legitimate Interest"?

There seems to still be some confusion around what classifies as a Legitimate Interest, and where consent would be more appropriate.

A case in point is a website one of our team recently visited. As is the norm these days, a cookie consent popped up, but we were surprised to see unnecessary Advertising cookies being stored based on the "Legitimate Interest" of an AdTech agency that the website shares it's user data with!
